DIRECTIONS
These are simple and easy, almost my go to lazy don’t feel like cooking meal. Season the shrimp in a medium sized bowl with salt, pepper, cayenne, chili powder, paprika and cumin along with some olive oil. Have it marinate for 30 mins (or skip, all good!)
Sear the shrimp in a pan with olive oil until cooked through (will be pretty quick, shrimp does not take long!)
Set the cooked shrimp aside.
In a small bowl, make your spicy sriracha mayo. I usually just put some mayo in a bowl and eyeball some sriracha and mix. I taste throughout to get to my desired level of spiciness.
For the slaw, you can either mix some of the shredded cabbage in with the sriracha mayo, or leave as is and just season with salt, pepper, and a little vinegar.
Heat up the tortillas in pan so they are warmed. Serve the slaw on top of the tortilla, then the shrimp, then add the spicy sriracha mayo on top. I sliced up some avocado and cilantro and added them both as garnish. Don’t forget to add some lime too! Enjoy!
