• 1 lbs flank steak, sliced
  • cumin
  • salt and pepper
  • chili powder
  • cayenne
  • lime juice
  • paprika
  • olive oil
  • shredded Mexican cheese blend
  • 1/2 red bell pepper, sliced
  • 1/2 green bell pepper, sliced
  • 1/2 onion, sliced
  • large flour tortillas


  1. First, in a large bowl, season the steak with olive oil, lime juice, salt, pepper, cumin, paprika, chili powder, and cayenne. Have that marinate for about 30 mins
  2. Once done marinating, grill the steak (I used my grill pan). Set aside
  3. Next, sautee the sliced onion and bell peppers in a pan. Cook until soft and add to the cooked steak. Mix all together
  4. Quesadilla time! Carefully spoon the steak and vegetable mixture on one side of a large flour tortilla. Top with shredded Mexican cheese blend and fold the tortilla in half
  5. Sear the quesadilla in a hot pan and flip (make sure it does not burn)!
  6. Once seared, cut the quesadilla into triangles and serve. Make as many quesadillas as you can to use all of your filling!
