MASSAMAN MEATBALL CURRY

INGREDIENTS

  • 1 lb ground beef
  • soy sauce
  • 1/2 onion, finely chopped
  • ginger puree
  • 2 cloves garlic, minced
  • breadcrumbs
  • 1 egg
  • salt/pepper
  • 1 can massaman curry paste (Maesri brand!)
  • 1/2 onion sliced (for the curry)
  • 8 oz potato, peeled and diced
  • 1 can of coconut milk
  • 1/2 cup to 1 cup beef stock
  • cilantro, for garnish
  • peanuts, roughly chopped for garnish
  • steamed white rice on the side

DIRECTIONS

  1. First step is making the meatballs! In a large bowl, mix the ground beef, 1/2 onion finely chopped, 2 cloves finely chopped garlic, a splash of soy, some ginger puree, salt and pepper, breadcrumbs, and an egg to bind. Work the mixture into small balls (don’t overmix the meat, it will become tough!)
  2. Next we are going to start the curry. In a large skillet, heat up some oil. Add the sliced onion and cook down.
  3. Next add the can of massaman curry paste, and stir. Pour the can of coconut milk and add your diced potatoes. Stir everything up
  4. Add the meatballs to the pan carefully and bring to a simmer. Depending on how much liquid you have, you may need to add 1/2 cup to a 1 cup of beef stock. The coconut milk may be enough
  5. Once the meatballs and potatoes are cooked through (about 20 mins), you are good to serve! I love my curry with steamed white rice and I add peanuts and cilantro to garnish. Enjoy!
